After a day of running around town doing chores, I was across the street at the World Market hoping to find a snack for later tonight, and dreading another boring dinner. Suddenly the bottles of maple syrup shook loose a notion that had been stuck in my head all day.

Pancakes. No, not just any pancakes: vanilla blueberry pancakes.

I had pretty much everything at home, even some blueberries in the freezer left that I picked last August. Yes! Grabbed an extra-hot decaf latte, picked up a carton of eggs, and headed back home.

Recipe: Whisk 1 egg white + 1c. buttermilk in a small bowl. Melt 2T butter in another bowl, add 1 egg yolk and 1t vanilla. Whisk together, and combine with buttermilk mixture. In a larger bowl, combine 1c. AP flour, 1/4t baking soda, 1/2t baking powder, 1t sugar, and a few dashes of salt; combine. Heat and butter non-stick frying pan over med-high heat. Pour buttermilk mixture over flour mixture, and stir 10 times (mixture will be lumpy). Pour into pan, sprinkle blueberries on top, flip when bubbles set. Serve with Grade B maple syrup. Eat, and pass out from sheer joy.
